The pineapple (Ananas comosus) is a well-known exotic plant, its popularity is mostly due to the delicious taste of its fruit. The level of enzyme activity can be expressed with GDU, the gelatin digestion unit (*Gelatin Digestion Unit). One gelatin digestion unit is the amount of enzyme that liberates 1 mg of amino nitrogen from a standard gelatin solution at pH 4.5 or 5.5 after 20 minutes of digestion at 45 °C.
